What Batch cocktails means
The main risk with a batch is dilution. A stirred or shaken drink gets about 20 to 25% water from the ice, but a batch never meets ice, so the water has to go in on purpose. You will meet batched drinks at parties and events, where every glass needs to taste the same as the last.
Take ten sours as an example. That batch needs 20 oz (590 ml) of spirit, 7.5 oz (220 ml) of citrus and 7.5 oz (220 ml) of syrup. Measure the batch with the same care as a single drink, since every error is repeated in each glass. A spirit-only batch keeps much longer than one with juice. Difford's says a bottled Negroni lasts two months in the fridge if the vermouth was freshly opened, while America's Test Kitchen keeps batched Margaritas up to 24 hours.
One popular idea is that a batch is a recipe multiplied and poured into a bottle. Without the added water, the drink from the bottle does not taste right, so the water step is the one to remember. Taste the batch before you pour the first round, so the water is right from the start.
How to batch cocktails
Scale the recipe in ounces, add the right amount of water, and store each part in the right place.
- 1.Convert the recipe to ounces, then multiply each ingredient by the number of servings you need.
- 2.Add water equal to about 20% of the total volume for any drink that will be poured straight from the bottle.
- 3.Freeze spirit-only batches such as a Manhattan, Martini or Old Fashioned, and keep citrus batches in the fridge.
- 4.Add the fresh citrus on the day you serve, ideally a few hours before the first pour.
- 5.Top spritzes and French 75s with sparkling wine or soda to order, never in the batch.

- PunchA punch is a drink style made for a bowl. Batching is a prep method that scales any single cocktail up ahead of time.
- Undiluted batchAn undiluted batch still gets stirred or shaken with ice for each drink. A pre-diluted batch has the water already in and pours straight from the freezer.
