How to make it

  • Select and pre-chill a Nick & Nora glass.
  • Prepare garnish of flaming lime lily pad – cut a coin-sized disc of lime peel and carefully cut/scrape away pith. Float the lime peel boat on the surface of the cocktail, then load the hull with 5 drops of white overproof Jamaican rum and ignite with a match. Instruct drinker to wait until the flame has burnt out before taking a sip.
  • STIR all ingredients with ice.
  • FINE STRAIN into chilled glass.
